This Korean coffee tastes like Christmas!

I can't stop raving about Maxim Kanu Mint Choco Latte since last year - it tastes like Christmas! 🎄☕ 
 
 
I love mint choco everything so I'm so happy to discover this variant of Maxim coffee. This is already a repurchase! 😍 This one's mild, creamy, minty (but not overpowering), and doesn't trigger my hyperacidity. Each sachet = 100ml water, but I prepare it in my tiny teacup with around 180ml of water, and it is still so delicious! If you are into Starbucks' seasonal Peppermint Mocha, this is a good and way more alternative.

Cooking 104: Mint Chocolate Forest Cheesecake using Jell-O!

Last weekend, I miraculously has the luxury of time to bake (a no bake) cheesecake. Haha! I am a newbie inside the kitchen, so let's start with the easy one first.

 

To make a no bake cheesecake, you will need the following:
  • 1 box of Jell-O No Bake Real Cheesecake Dessert
  • For the crust:
    • 2 tbsp sugar
    • 1/4 stick butter
  • For the filling:
    • 1.5 cups cold milk

Instructions:


Warning: Don't believe in box as it said I needed a 9-inch pie plate. The mixture is not enough to cover 9-inches...and I ended up with a cheesecake that looked like a giant cookie. LOL! Make it 6-inches or less!

Never knew that these 2 pouches would turn to a decadent dessert. ♥ Just follow EASY the instructions in the box and you'll be fine. Trust me. I can't even cook to save my life.

Step 1: Crust Mix
- I combined this crust mix with 1/4 stick butter and 2 tbsp brown sugar inside the steel baking pan and pressed it at the base of the pan until it felt firm. It smells like butter cookies!

Step2: Filling Mix
- I combined 1.5 cups cold milk with this filling mix. Initially, the filling mix looks really white (which made me sad since it looked more like flour and confection sugar). When it comes contact with milk, it turns to a yellowish cheesecake shade like magic! Beat it based on the instructions on the box, 30 seconds low speed, then 3 minutes medium speed. The filling will be thick by then, and you'll spoon this on top of the crust.

DONE! Place in the fridge for 1 hour, and serve! :3

And because I wanted to improve the recipe and make it my own, I decided to shave Cadbury mint chocolate into the filling (before it went under the batter), and as topping. It's lovely!


The Jell-O had a softer texture compared to actual baked ones. The chocolate added a delicious minty touch to it!

Happy List II: "Tastes Like Christmas!" Edition

Time for another Happy List! This time, it's all about PEPPERMINT-flavored things. Chocolate, ice cream, you name it... as long as it's minty, I love it. Haha :D

1. Meiji Apollo Feel Mint Chocolate


What we have here in the Philippines is the strawberry-flavored one. Would you believe, when I was a kid, a blueberry-flavored one existed, too? :D


This box of Meiji Apollo Feel Mint Chocolate came all the way from Hong Kong. (Thanks, Panda!) :3 The foil pack feels a bit sad though, since you can't reseal it.


It looks like green tea, but no! It's mint. ❤ The taste reminds me of Andes Mint Parfait Thins, only smoother and more "melty".

2. Lord Stow's Bakery Peppermint Brownies


If I were to bake my dream brownie, THIS would be it. At first glace, all you see is a regular brownie, but when you bite it, you'll immediately have a taste of Christmas with its strong minty kick. It's balanced by the thick, moist, and oh so fudgy chocolate. I can imagine this being served ala mode with... (see #3 NOW!)

3. Big Scoop Mint Chocolate Chip Ice Cream


I originally wanted to keep this as a secret, because you might hoard when you find out and leave no stock for me. Haha! I've always seen mint ice cream as a rare and special flavor. It's always sold expensively per scoop at malls. Until I found my dear Big Scoop.

4. Dippin' Dots Mint Chocolate Flavored Ice Cream


Who knew Dippin' Dots had ice cream pouches, too? Now if only they had dry ice to go with it, I would have bought home all flavors.
 

These packets also come in other flavors such as Banana Split (!), Cotton Candy, etc. Each packet is reasonably priced at P100. 

5. Pretty Green Slush from Sandwicheese!


Sandwicheese! by Banapple is located just beside Banapple at Sky Garden, SM The Block. I love their Chicken Pesto Mozza Sandwicheese and this refreshing drink! This Pretty Green Slush is a blend of sweet calamansi, mint, and brewed tea.
