Potato: my favorite superfood + fun recipes to try

What is your favorite vegetable?

Mine are potatoes. Yes, potatoes are a vegetable. And I'm not just talking about fries or potato chips. I like them mashed, roasted... even good ol' boiling does the trick.

My niece Daphne is now 8 years old, and is a very picky eater. From a super chubby baby she's slimmed down since the day she started being an active toddler and now to an elementary student. Time flies so fast! And while I still love playtime with her after I get home from work, I can see how busy she is with doing homework at night. Which gets me thinking: For kids to stay healthy and fit throughout the school year, we must give attention to good nutrition. Growing and learning kids need to power up for school, and while kids can get picky with food these days, we can provide them with tasty dishes from POTATO - a highly nutritious superfood. Yup, they're not just "all carbs", as some would say. Potatoes are good quality carbs as they help optimize mental and physical performance.

Potatoes USA, an organization that has brought US frozen, US tablestock (fresh), and US dehydrated potatoes to the Philippines, offers a lot of options for potato meals.




The organization recently visited the culinary club of Diliman Preparatory School in Quezon City to demonstrate the potato's versatility. Chef Kristine Lotilla and the students of Diliman Preparatory School prepared two recipes: Broccoli Cheddar Potato Puffs and Chocolate Mashed Potato Truffles. Yes, potatoes for dessert! 🍫

The students are members of the school's Little Chefs Club.  Each student was given a mashed potato kit containing U.S. Dehydrated Potato Standard Flakes, milk, butter, and salt. Chef Kristine showed them how to rehydrate the dehydrated potatoes.

If the kids can do it, so can you. Instead of just frying, get creative and explore recipes that your child (or niece, in my case) can enjoy. Try baking, roasting, or mixing potatoes with low-calorie ingredients. Also, consider keeping the skin on for more nutrients. My personal favorite potato dish is roasted baby potatoes. I like them better than fries. They're so good!

Preparing and portioning your potatoes are a step towards healthier and happier kids. There's so much more to power snacking and right eating than just avoiding sweets.
